SOBA NOODLES WITH HEIRLOOM TOMATOES
I buy Soba at Whole Foods in the oriental foods section where they have several kinds of noodles in packages. Boil noodles using the directions on the package.
The rest of the recipe is for one of the measured amounts in the package that is marked by a thin paper wrap. If you are using loose noodles, use 1 in wide, 3/4 in deep section of noodles.
Take any heirloom tomatoes at hand and cube them. I prefer the juicer ones for this recipe.
When noodles are ready, drain water and add tomatoes.
2 T balsamic vinegar
2 T brown rice vinegar (regular rice vinegar is good too)
1/4 c olive oil.
Mix and serve warm; any leftovers are delicious cold.
